Happy Wednesday, Saucers. As of this week, we are within tickling distance of having 100 paying subscribers. Such a number will mean that this publication is bringing in approximately £300 a month (we lose a chunk to Substack and taxes etc). That’s enough to pay four writers £70 per piece, and then a little extra to go towards marketing costs or longer pieces. A one-off: Rita Paraíso at Marmo
Chef Rita Paraíso is the first to take up residence in Marmo’s downstairs wine bar. Rita, who has worked in several top London restaurants, is drawing on her Portuguese heritage for a menu of small plates which are being paired with pours from Marmo’s stellar wine collection. Rita has recently settled in Bristol (welcome, Rita!) but this residency is a fleeting one so make sure you visit before 20 December. Early intel suggests excellent things.
